Featured Brew: Hard Kombucha

Kombucha is a fermented tea that naturally contains probiotics, antioxidants and organic acids. As a fermented beverage it naturally contains around .5% alcohol. Hard kombucha lets the alcohol develop from 4.5 to 8%.

Touted as a “healthy buzz” because of its live cultures and probiotic benefits, it is labeled as beer because of the similar alcohol content, but actually has the fizz of a champagne and the light fruity flavor of a spritzer.

Recipe:
Red Cabbage and Carrot Slaw with Apple Cider Vinaigrette

For the Vinaigrette:
1/4 cup apple cider vinegar
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1/4 cup vegetable oil
Salt and freshly ground black pepper

For the Slaw:
1/2 head red cabbage
2 carrots, peeled
2 apples
1/2 cup slivered almonds
2 teaspoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon black pepper

Place all the dressing ingredients in a jar and shake to combine. Remove the core and outer leaves from the red cabbage. Using a food processor fitted with the shredding attachment, shred the red cabbage, carrots and apples. Transfer to a large bowl. Pour enough of the vinaigrette over the slaw to moisten completely. Toss to combine. Cover and refrigerate for at least 1 hour or up to 4 hours. Add the almonds, fresh parsley, salt and pepper. Toss to combine and serve.
